The butler did it, with a smoking gun…(in the kitchen)
-2 kg pork ribs (baby back ribs or St-Louis style), about 18 ribs
-1 clove of garlic
– crushed 2 tbsp tomato paste
-6 tbsp soya sauce
-3 tbsp honey
-2 tbsp red wine vinegar
-1/2 tsp salt 1/2 pepper
-1/2 tsp paprika or pimenton de la vera
-2 tsp Worcestershire sauce
Place sauce ingredients in a large bowl and mix well. Add ribs and mix to ensure meat is well coated. Marinate at room temperature for 1 hour or up to 24 hours in the refrigerator.
Preheat oven to to 350F. Transfer meat with sauce in a baking dish, cover well with aluminum foil. Cook in the oven for 1 hour 1/2.
Uncover and cook for another hour, turning the ribs every 20 minutes. Use thongs for easy handling of the ribs.
